Makes 12
Preheat oven 180 C
Ingredients:
6 eggs, whisked
130g feta cheese, crumbled
130g cherry tomatoes, quartered
130g broccoli, finely chopped
1 tsp garlic granules
1 tsp ground black pepper
1/2tsp paprika
To Make:
- Brush 12 cups of a muffin tin with olive oil.
- Mix all ingredients in a large bowl and divide evenly into muffin tin, filling each cup 2/3 full.
- Bake 15 minutes, and allow to cool in the tin for about 10 minutes before turning out.
Enjoy:
- As part of a picnic
- With a green salad
- As part of a buffet
- As part of a brunch
- Add to a packed lunch
