Savoury Saturday: Baked Tortilla Espanola, (Spanish Tortilla)



Inspired by our 2005 Annual Adventures in Madrid, Spain. 

Spanish Tortilla is a perfect dish to serve for a Tapas Themed Night.

Oven Baked Tortilla Española – Adapted from Food and Wine Magazine

2 pounds potatoes (Yukon Gold. preferred) – peeled and sliced in 1/4 inch rounds
2 large onions, thinly sliced
6 large eggs
1/4 cup Extra Virgin  Olive Oil
Salt & Pepper

Directions

1. Place potatoes in a large saucepan and cover with cold water. Add 1 t. salt and bring to a boil. Reduce heat to a simmer and simmer until potatoes are tender, about 7 minutes. Drain and rinse under cold water to stop the cooking. Lay potatoes out on a kitchen towel or paper towels to dry. Pat dry.
2. Preheat oven to 400 degrees. Heat 2 T of the oil in a 12 inch oven proof skillet and cook the onions over medium heat until brown (10-15 minutes.)Remove from heat.
3. Crack the eggs in a large bowl and beat until pale yellow in color. Gently stir in potatoes, onions, and season generously with salt and pepper.
4. Transfer to a glass or ceramic dish coated with EVVO. Drizzle the remaining 2 teaspoons of EVVO on top of the egg, onion, and potato mixture (this will help make the top part of tortilla a little crunchy).
5. Cook uncovered for 20 minutes, or until eggs are set, and and potatoes are tender. Remove from oven and cool.
6. To remove the tortilla from the dish, run a knife around the edge and invert on to a plate. Cut and serve.

5 Tips for Hosting a Themed Party

A BVF fav is bringing together friends and family to celebrate special occasions. We love entertaining, creating, and hosting themed gatherings. Recently, Monica hosted a “Welcome Baby McKenna” party to celebrate the birth of her friend Angela’s newest addition to her family-the beautiful McKenna Michele. It was a delightful afternoon to welcome baby McKenna and introduce her to excited friends and family.


1. Select a theme add accents: Pick your theme and design the special occasion around it.  For welcoming baby McKenna, pink was the perfect color to accent an afternoon of bubbles and sweets. To add a special touch of color, pink bows were glued to the plastic champagnes glasses. 


2. A variety of options: For the "bubbles and sweets" gathering, we served champagne and an alcohol free sparkling pomegranate cranberry drink. We had almond lacey cookies (look for the recipe in a future Thursday Treat recipe), creme puffs, chocolates, fresh fruit with a vanilla yogurt dip, and a candy bar. Give guests a variety so there are options everyone can enjoy! 


Personalize: To make the event extra special, we had a cake made with a  welcome "Princess McKennna" message. 

Party favors for the guests: A candy bar is super easy to put together, select a few types of candy and display the candy in a variety of dishes. Guests enjoyed the candy throughout the gathering and made to-go bags for later. 


A special memento for the guest of honor: Special wishes for McKenna were a success! We all wrote down warm thoughts on pre printed sheets of paper to send home with Angela. A nice touch to end the gathering!! Make your own template for guests to use, simple and thoughtful!

A little of BVF's ICEing- Inspiring, Creating, and Entertaining: a MADD moment.

Inspiration and creativity are favs of BVF!! Di loves themes and it makes entertaining so much easier to organise. Here are some fabulous ways on how to create a memorable gathering. Happy entertaining!! 



Just a MADD moment...

Menu- plan your menu in advance to make sure you have all the ingredients and that it meets the dietary requirements of your guests. 

  • Nibbles laid out to go with the welcome drinks, so guests can pick whilst chatting.  
  • Starters that are easy and you can make in advance so you can mingle when guests arrive. I usually make something cold so I can have it pre-plated and ready to serve. 
  • Mains- a dish that doesn't require much last minute attention so you can be with guests rather than in the kitchen. 
  • Desserts, my guests always appreciate something homemade but if you're not a baker the shops have tasty treats. Have your pudding on a cake stand or something similar ready so the meal flows and you don't miss out on the social occasion. 
  • Cheese, this is a favourite of BVF because there are so many to try! Cheese, crackers and a chutney or relish is a great end to a meal because people can pick at it whilst enjoying the table banter and it's an alternative to those who don't have a sweet tooth
  • Coffee and petit fours are a nice finish to the meal. 

Atmosphere- appeal to the senses- music, lighting, scent...what do you want your guests to experience when they walk into your house. For example if you're hosting a Christmas party- carols, soft lighting and cinnamon would come to mind.

Decor- chose a table cloth, napkins & centerpiece that match and incorporate a theme. If it's a special dinner party, I like to include a table present that compliments the theme. For example if it's a summer girly dinner give everyone a jar of homemade jam.

Drinks- I always like a welcome drink, it's a special aperitif that gets everyone in the mood. For example if you're hosting a 1920's party start with a gin fizz.

After a MADD moment of planning, the event should all come together nicely. Enjoy your party!
